The all-new French culinary gems at the Troika Sky Dining makes for a memorable au revoir.
Come with us to a cool date night spot at KL’s best dining destination with a view to chill – Fritz at Troika Sky Dining with an all-new elegant dining experience offering classic French cuisine with global influences. The music playlist is curated to perfection to think you could be sailing down the Seine River to candlelight, champagne and red wine.
The new menu is exquisite, well thought of, selective to the palate with plenty of choices to suit the mood of the evening. We opened our dinner with the classic Fruits de Mer - Fritz seafood platter (RM250). Oysters were fresh and silky retaining the taste of the sea; mussels were delicate, soft and steamed to perfection.
The platter easily serves two or three diners, with plenty to go by. The prawns were crunchy, along with the salmon and scallops topped with caviar. Paired with a floral white wine or a red, if you prefer from the extensive wine list, the seafood platter was a delight. You can choose from the freshly made options of home-made sauces, or simply pair it with fresh lemon. The experience is refreshingly delightful.
Our next order from the main course was the Tournedos Rossini (RM190) – a Pan seared tenderloin on a bed of wilted spinach and mushroom set on a brioche crouton, topped with foie gras and served with black truffle sauce. The dish arrived warm, and the meat melted in our mouth.
The foie gras was silky and sensational, and the crouton provided just the right texture and balance to the multi-faceted delicious proteins. A suggestion would be to eat the different proteins and carb swerved well together with the black truffle sauce for a sensational tingling in the mouth. Undeniably, the star of the evening and a true conversation starter.
Our dinner was not complete without experiencing the side table LIVE prep of our Crêpes Suzette (RM38) flambéed to our delight and served hot in caramel orange sauce and vanilla ice cream.
The dessert refreshed our palate with a vibrant zest of orange, lemon, and teasing savoury deliciousness. As if beckoning us to indulge more of the French dessert classics on the menu.
We lingered on catching the views of the twinkling city lights to the sound of the excellent French playlist fully satisfied with this peek into a culinary repertoire perfected by Executive Chef and Director of Troika Sky Dining, Mr Christian Bauer.
“We want to offer really good, unfussy food that puts a smile on your face, having moved on from fussy food and from trying to impress with technique. It's about getting the best quality ingredients, treating them with respect and allowing them to shine. Good technique has to be there, but it sits quietly in the back seat, seen but not heard,” the chef shared.
A must mention is the delicious Pommes Fritz (RM18) - fries that take three days to make. We tried a bowl of the fires and yes, the buttery, light potato just crumbles on the tongue, soft, yet making its presence felt. A recipe the chef was not eager to share.
Overall experience - Excellent service and attention to detail. Definitely a place for an encore.
